At 38, José Aparicio is redefining Panamanian gastronomy by blending authentic flavors with a contemporary, innovative edge. Born and raised in the lush farmlands and forests of Chiriquí, his culinary journey began at home, inspired by the traditional recipes of his mother and aunts. From an early age, he was immersed in the rich aromas of freshly brewed coffee and artisanal bread that define mornings in rural Panama. Those experiences shaped his deep respect for fresh ingredients and simple, honest cooking. Despite coming from a farming family, José became the first professional chef in his lineage, carrying forward the wisdom of generations of home cooks. He refined his craft at the The Panama International Hotel School, launching a career that spans over 17 years in prestigious restaurants and world-class hotels. Working alongside internationally renowned chefs, he developed a distinctive style rooted in precision, creativity, and respect for culinary tradition. José gained national recognition through two standout seasons on Top Chef Panamá, where he showcased his technical mastery and boundless creativity. His cuisine tells a story that is authentic, unpretentious, and deeply connected to the land. By sourcing local ingredients and exploring Panama’s rich biodiversity, he continuously crafts innovative dishes that elevate traditional flavors to new heights.
